Key Lime Meltaways

Martha Stewart makes beautiful cookies, but the problem for me is they are a little on the high maintenance side. Looking at the ingredient list on a MS recipe you can see the perfectionist at work. That's just not me. Both my kids (ages 6 & 9) love key Lime pie. In fact, when my younger one turned 6, he asked for key Lime pie instead of a birthday cake. I knew instantly these would be a hit. They are so light, they are perfect to finish any summer supper.

3/4 cup butter, room temperature
1/2 cup icing sugar, plus some for dusting
3 tbsp key Lime juice
1/2 tsp vanilla extract
1 1/2 cup all purpose flour
1/4 cup corn starch
Pinch of salt
Whip butter and icing sugar together until fluffy. Mix in key Lime juice and vanilla. In a small bowl, mix together flour, corn starch and salt. On low, mix dry ingredients into the butter mixture. Turn the dough onto a slightly floured surface, divide in half and firm each half into logs approximately 1 inch in diameter. Wrap each log with parchment paper and refrigerate for about 1 hour. Preheat oven to 325F. Remove logs from refrigerator, unwrap and slice into 1/4 inch discs. Place on a baking sheet and bake 10-12 minutes. Place on a wire rack to cool slightly. While still a little warm, dust each cookie with icing sugar and place back on the wire rack to cool completely.
