Lashroaig Scotch Salted Caramels

Boozey, Salty, Creamy... What more could you ask for?!

A candy thermometer
1.5 cups sugar
1/4 cup brown rice syrup*
1/4 cup water
1 cup heavy cream
5 Tbs butter
1 Tsp larger flake sea salt, like fleur de sel, or vanilla salt, plus more for sprinkling
1 Tsp vanilla extract
1/4 cup Whiskey, Scotch or Bourbon of your choice

*If you have/would prefer to use light corn syrup in lieu of brown rice syryp, it would most certainly work, as it is actually more commonly used traditionally in making caramels. I just prefer not to use corn syrup if I don’t have to, and have found brown rice syrup to work successfully almost always in it’s place.
