Lemon Chicken & Rice Soup

Thick and hearty, this soup is delicious and comforting.

6 cups chicken broth
1 Tbsp. vegetable or canola oil
2 boneless, skinless chicken breasts (about 12 ounces)
¼ cup minced onion
2 carrots, peeled and sliced into ¼-inch rounds
1 tsp. fresh minced thyme
¾ cup long grain rice
2 Tbsp. fresh minced parsley
1½ to 3 Tbsp. lemon juice (adjust to your liking)
4 large egg yolks
