Lemon Cranberry Loaf

Here’s another gem I came across in my handy-dandy “Finest Recipe Collection” by Philadelphia Cream Cheese. I love making loaves, especially ones like this which are suitable for breakfast.

8 oz. cream cheese, softened
1/3 c. margarine or butter
1-1/4 c. sugar
1 tsp. vanilla
3 eggs
3 tbsp. lemon juice
1 tsp. grated lemon zest
1 c. dried cranberries
2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
Preheat oven to 325°F. Beat cream cheese, margarine, sugar and vanilla in large mixing bowl at medium speed with electric mixer until well blended. Add eggs, one at a time, mixing well after each addition....
