These baked Lemon Poppy Seed Doughnuts are light, crunchy and filled with lemony goodness!

For the doughnuts:
2 and ¼ cups plain flour
2tsp baking powder
Pinch of salt
Zest of 1 large lemon
2tbsp poppy seeds
½ cup caster sugar
1 large egg
¼tsp vanilla extract
1tbsp freshly squeezed lemon juice
1tbsp butter, melted and slightly cooled
¾ cup milk
For the glaze:
1 and ½ cups icing sugar, sifted
3-3 and ½ tbsp lemon juice
Extra poppy seeds for garnish, optional
