For the Cake
3 cups cake flour* 300g
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 large eggs room temperature
1 and 1/2 cups caster/granulated sugar 300g

2 teaspoons lemon extract**
