Lemon ricotta pancakes

A light, fluffy pancake bursting with lemon flavour!

2 cups pancake mix , 2 eggs, 1 1/2 cups milk, 1/2 cup ricotta cheese
1 tbs lemon juice,1 1/2 tsp lemon zest.
Mix eggs , milk , ricotta, lemon zest & juice . Then add in the pancake mix and blend until well incorporated. In a large skillet add 1 tbsp canola oil , heat on med. Add the pancake mix in to the skillet using a 1/2cup measuring cup . Cook til bottom edge is golden brown. Flip and cook til the edges again are golden brown or until the middle is no longer fluid.
