Lemon Vinaigrette

1/2 c. olive oil
3 T fresh lemon juice
1 T minced shallot
1 1/2 tsp dijon mustard
1/2 tsp grated lemon peel
1/2 tsp sugar
Whisk all ingredients in bowl to blend. Season with salt and pepper. Can be made one day ahead. Chill. Bring to room temperature before using.
