{Light} Taco Casserole Recipe

Let's be honest . . . there are lots of yummy dessert recipes on our blog, but we know how important it is to eat healthy and watch our intake. I LOVE Mexican food and came across this recipe from Recipes to Run On and knew that I needed to try it. It looked big on flavor, but lower on calories, so I made it last week and it was a HUGE hit with my family. It was super easy to throw together and was ready in no time! 24 Tortilla Chips (+ additional for serving)
1/2 TBSP Olive Oil
1 Onion, chopped
2 cloves Garlic, minced
1 lb. extra lean ground beef or ground turkey
3 TBSP Taco Seasoning
1 can Black Beans, drained
1 cup Salsa
2 cups Shredded Fat-Free or Reduced-Fat Cheese
Other toppings to taste - I used tomatoes, fat free sour cream, and shredded lettuce
