Lite Pistachio Mousse

This is one of my favorite light desserts! After dinner, I often want something sweet, but I don\\\'t want the fat and sugar that usually go along with that! This mousse satisfies all of the above! You still get the taste and consistency of a satisfying dessert without the guilt! I once made this for company and they couldn\\\'t believe it was light! This recipe uses pistachio flavored pudding mix, but you can switch it up and use any flavor you\'d like. (Chocolate is always a winner)

8-oz. Cool Whip Lite
1 package fat-free, sugar-free pistachio instant pudding mix (or any flavor you\'d like)
1 cup fat-free milk
Additional Cool Whip Lite
Chopped pistachios (or the topping of your choice)

A Spanish omelette is also known as tortilla de patatas in Spain where it is a tapa and it consists of just four ingredients plus seasoning. It is a Spanish classic dish for very good reasons. It is simple to make, it is nutritious and absolutely delicious. Oh, Spanish tapas!! Aren't these simply the best?



6 large eggs
1 large onion I used red organic
3 med potatoes sliced or cubed
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper or some chilli flakes/cayenne pepper
