Low Calorie Triple Chocolate Chunk Muffins

These muffins have a few substitutions in them that make you feel a lot better about eating more than one. No one in my family could tell from tasting them that they only had 58 calories per muffin. They were so moist and delicious!

1-3/4 cup old fashioned oats
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
1/2 teaspoon cream of tartar (or 1-1/2 tablespoons vinegar)
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup hot water
1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tablespoons Stevia
1/2 cup semi-sweet chocolate chips
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
1/2 teaspoon cream of tartar (or 1-1/2 tablespoons vinegar)

1-1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup hot water

Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.
