My first job was at a bagel shop at the height of the bagel craze. Previous to working there, I had never even realized just how many types of bagels there were, nor how ridiculously some people would pronounce them (“can I get a jal-op-in-o bagel?” pronouncing the “j” like in the word “jam”). 2 1/4 teaspoons dry active yeast
2 teaspoons granulated sugar
1 1/3 cups warm water
3 1/2 cups bread flour, plus extra for kneading
1 3/4 teaspoons kosher salt
