Mango Chicken Salad

Very refreshing, and perfect for lunch or summer dinner on the patio. Great if you have an abundance of basil in your garden!

Mango Chicken Salad
1 pound cooked, shredded chicken
1/2 cup mayonnaise
1 fresh mango, diced
1/4-1/2 cup diced green onions
2 tablespoons granulated sugar
2 tablespoons chopped fresh basil
salt and pepper to taste
Combine all ingredients except basil. Chill several hours. Add basil just before serving. Serve as a sandwich or on a bed of greens.
