Mashed Potatoes with Wilted Spinach

One of the ways I can get my kids to eat spinach (most of the time) is when I add it to mashed potatoes. Just one step on from regular mashed potatoes gets a healthier side for all! I served these with my toad-in-the-hole.

6 potatoes scrubbed, peel on, halved and sliced
6 oz fresh baby spinach
½ c of olive oil
¼ stick of butter
¼-½ c of milk
2-3 cloves of garlic peeled and crushed
salt and pepper to taste

Cover the potatoes and garlic in a pot and cover with water.
Boil until soft (20-30 minutes depending on how thickly you slice them).
Drain the water.
Add the olive oil and butter and mash the potatoes.
