Mediterranean Vegetable Pinwheels

These pinwheels are packed with fresh vegetables and just the right amount of Parmesan cheese - perfect with soups!

For the dough:
3? cups bread flour
1 sachet fast action yeast
1 teaspoon salt
1 teaspoon runny honey
1 tablespoon olive oil or coconut oil
10 ounces / 300ml tepid water (1 part boiling, 2 parts cold)
For the filling:
1 medium courgette, grated
1 red bell pepper, diced
1 medium onion, thinly sliced
8 tablespoons passata
1 garlic clove, minced
1 tablespoon thyme
½ teaspoon black pepper
1 tablespoon butter
¼ cup Parmesan, grated
