Mini Cherry Cheesecake Recipe

Not only are these cheesecakes adorable to look at, but they are made with a vanilla wafer crust that is absolutely amazing! They are pretty much irresistible on all levels.

1/2 box (6 oz) vanilla wafer cookies, finely crushed
3 tablespoons butter, melted
2 (8 oz) packages cream cheese, softened
3/4 cup sugar
2 eggs
1 teaspoon lemon juice
1 teaspoon vanilla
1 (21 oz) can cherry pie filling
