Mix & Match Salad – This basic recipe is your guide to creating an endless number of delicious salads AND a great way to reduce food waste!

6 tablespoons (3 fluid ounces) olive oil or avocado oil
2 tablespoons (1 fluid ounce) vinegar
Pinch of salt and pepper
4 cups loosely packed (2 ounces) greens/lettuce
1 cup (3 ounces) cooked meat or seafood, cubed, shredded or cut into bite size pieces
½ cup (2 ounces) trail mix (dried fruit, nuts, and seeds)
¼ cup (½ ounce) crumbled or shredded cheese
6 grape tomatoes, halved or 1 small tomato diced
½ avocado, peeled and diced
2 hard-boiled eggs, peeled and quartered
OPTIONAL ADDITIONS
Broken crackers (in place of croutons)
Leftover grains, pasta, vegetables, beans
Whisk together the oil and vinegar and season with salt and pepper. Assemble the remaining ingredients, in the order listed, in 4 shallow salad bowls. Dress with the vinaigrette. Serve 4.
