Mom's Carrot Cake

This is a recipe that my mom used to make, she rarely baked but this is a treat we really looked forward to. We lived in an area with many apple orchards and loved to find recipes to use good fresh apples in.

1 1/2 cups oil
2 cups sugar
3 cups flour
2 cups grated carrots
4 eggs
3 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 chopped raw apple
1/2 cup nuts
1/2 cup soaked and drained raisins
Mix wet ingredients. Combine dry ingredients and add slowly to wet ingredients. Pour batter into a 9x13 pan. Bake at 350 degrees for 45 to 50 minutes. Frost with cream cheese icing.
