Not Your Kids Grilled Cheese (with roast beef, two cheeses and caramelized onion)

Grilled Cheese, is still, to date, my favorite thing to eat. However, if I serve up a plain old grilled cheese, my family would be wondering what else is coming. So I turned my plain old grilled cheese into something filling and main course worthy! I took it a step further and made my own bread (with a bread machine). Recipe for that can be found on my blog. You can certainly use store bought bread, but get a nice thick cut. Caramelizing the onions, takes a few minutes, but worth the wait!
For 4 Sandwiches:
8 slices thick sandwich bread
8 slices provolone cheese
8 slices American cheese
1 lb thinly sliced deli roast beef
1 red onion, sliced thin
ΒΌ C softened butter + 2 T

Caramelize the onions: Heat butter on medium heat, add onions, cook down stirring occasionally for 20 minutes until soft and caramelization occurs.
