Protein PACKED and delicious!

1 1/2 Cups Old Fashioned Oats
3/4 Cups unsalted peanuts
3/4 Cup Almonds
1/4 cup Vanilla protein powder
3 Tlbs. Powdered Peanut Butter (I used PB2 brand)
4 Tlbs. Chia seeds
1/2 Cup shredded, unsweetened coconut
1 tsp. Cinnamon
1 Cup chopped dates
1 1/2 Cups raisins
2 tsp vanilla extract
1/2-1 cup water (as needed)
1/2 cup sunflower seeds
1/2 cup pepita seeds
1. Preheat oven to 350 degrees. Line an 8x8 inch pan with parchment paper. 2. Toss together first 11 ingredients in a large bowl. 3. Place in food processor and process. Add a bit of water at a time until the mixture forms clumps. 4. Transfer back to the bowl and mix in the sunflower seed and pepitas. 5. Press into prepared pan and bake for about 20 minutes. 6. Allow to cool completely and remove from pan. Cut and store in sealed container.
