Oatmeal Pancakes

This recipe came from my brother-in-law's Grandma Wilson and is one of our favorites.

2 C. Quick Oats
2C. Buttermilk
2 eggs (beaten)
1/4 C. melted coconut oil, could use melted butter
3/4 C. whole wheat flour
2 T. sugar
1 1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. cinnamon
1/4 tsp. salt
Mix everything together until blended, but be careful not to over mix. Cook on a hot griddle and serve with syrup or our favorite, apple butter. This recipe is pretty versatile. Some of our favorite ways to change it up are: banana pecan (just mash up a banana or two and throw in some chopped pecans), zucchini (just toss in some shredded zucchini and add a little extra cinnamon), apple (just add in some shredded apple and more cinnamon if you want) or pumpkin (add in about 2/3 C. of pumpkin and 1/2 tsp. of pumpkin pie spice).
