One Dish Quinoa Chicken Parmesan

A one dish, SO easy chicken parmesan with quinoa. Healthy too!

1 can (24 ounces) garlic & herb flavored spaghetti sauce
1 cup quinoa
2 cups water
1 and 1/2 pounds boneless, skinless chicken breasts
1 cup Italian style bread crumbs, separated
3/4 cup freshly grated Parmesan cheese, separated
1/2 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1 cup mozzarella cheese
Optional: fresh parsley
