One Skillet Chicken Burrito Bowl

A delicious and filling meal made using only one skillet.

3 tablespoons olive oil
1/4 cup diced yellow onion
1 pound boneless skinless chicken breast, cut into bite sized pieces
1/2 teaspoon black pepper
1 cup brown rice, uncooked
1- 14.5 ounce can no salt added diced tomatoes
1- 15 ounce can low sodium black beans, rinsed and drained
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1 teaspoon cumin
2 3/4 cups low sodium chicken broth
1 1/2 cups shredded colby jack cheese
