Open Fried Egg & Mushroom Sandwich

A delicious and easy to make breakfast meal!

4 medium size eggs (2 per person)
1 cup of Roma tomatoes (diced)
1/3 cup of yellow onions (diced)
4 slices of bread (I use thin cut slice oats organic bread)
Unsalted butter
Parsley or Cilantro (optional)
White mushrooms ( about 4)
Salt&black pepper (to taste)
In a non-stick sauce pan on medium high, add a Tbs of unsalted butter. Once the butter has melted, add the mushrooms and season it with salt and black pepper (remember to always season your food as you go)....
