Our Creamy Broccoli Cheese Soup

As fall approaches, we turn to soups and stews. This Broccoli Cheese Soup is filled with flavor and a great way to beat the cool fall temps! It is made using all whole food ingredients, fresh from the market and delivers big, bold flavors and nutritional value as well.

1/4 cup plus 1 tablespoon butter
1/2 cup diced onion
1/4 cup flour
2 cups vegetable stock
1 cup half and half or light cream
1 cup milk
1/4 teaspoon nutmeg
2 bay leaves
1/2 pound broccoli
1 cup diced carrots
8 ounces cheddar cheese, shredded
1/2 teaspoon salt
