These pumpkin flavored whoopie pies just say FALL! With soft, delicious pumpkin cake cookies, filled with silky, sweet, icing, they are a treat everyone will enjoy!
Pumpkin Cookies:
2 cups packed light brown sugar
1/2 cup vegetable oil
1/2 cup applesauce
1 1/2 cups pumpkin puree
2 eggs
3 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons vanilla extract
1 tablespoon ground cinnamon
2 teaspoons ground ginger
1 1/2 teaspoons ground clove
2 teaspoons ground nutmeg
Filling:
1 egg white
3 tablespoons milk
1 1/2 teaspoons vanilla extract
2 1/2 cups powdered sugar
3/4 cup shortening or butter
