Overnight Crockpot Apple Pie Oatmeal

My oldest son loves oatmeal. He asks for it every day. I don’t keep the instant packets on hand and I don’t usually have enough time in the mornings to make him oatmeal on the stove top. I love my crockpot and have made overnight oats in there before but I decided to spice it up a bit . It turned out delicious and everyone cleaned their bowls! It’s always so nice to wake up to a hot breakfast done already too!

1 cup steel cut oats (yes, it has to be steel cut, rolled oats will get too mushy)
2 cups apple juice
2 cups milk
1/2 cup water
1/4-1/2 cup brown sugar
3 apples diced
pinch of salt

Mix all ingredients in the crockpot the night before and cook on low for 8ish hours. I think mine cooked for 9 hours and it was perfect. If you're going to have it cook for longer than that, add a bit more...
