Paneer And Potato Scramble

2cups paneer (Indian cottage cheese) chopped finely or grated
1 medium potato chopped finely or grated like the paneer
1 medium onion finely chopped
1 tbsp chopped coriander
1 green chilly, de-seeded and minced (optional)
1/2 tbsp mustard seeds
1/2 tbsp cumin seeds
1 tbsp oil
Salt to taste
In a shallow pan, heat oil. Add cumin and mustard seeds. After the seeds sputter, add the onions. Fry onions for 3 minutes, stirring frequently. Then add the potato and the paneer and fry until cheese starts to brown. Garnish with coriander and green chilly and season with salt. Serve hot!
