Parisian Potatoes

These potatoes are special because you take the time to melon ball them into cute little spheres that crisp up so well and stay light and fluffy on the inside. You can make them ahead of time and keep them in cold water until you are ready to pan roast them.

2-1/2 to 3 pounds potatoes, peeled (I used white)
3 tablespoons olive oil
3 tablespoons butter
4 garlic cloves, minced
salt and pepper, to taste
Parsley, chopped for garnish
