Peanut Butter Banana Whole Wheat Cupcakes

Whole wheat buttermilk pancakes loaded with fresh bananas and peanut butter, and then stacked and spread with more peanut butter before they're drenched in maple syrup. Elvis gives his stamp of approval.

1½ cups whole wheat flour
2 tablespoons brown sugar
1½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon kosher salt
1 egg
2 tablespoons peanut butter
1½ ripe medium sized bananas
1½ cups fat free buttermilk
additional peanut butter & bananas for garnish
lite maple syrup
In a large bowl whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Set aside. In a smaller bowl lightly beat the egg. Stir in the peanut butter and mashed bananas....
