Peanut Butter Oatmeal Sandwich Cookies

1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1-1/4 cup all purpose unbleached or wheat flour
1/2 teaspoon salt
3 cups quick cooking oats
1-1/3 cups mini milk chocolate morsels (Nestlé )

Filling
3/4 cup butter at room temp
1-1/2 cups creamy peanut butter, preferably jiff normal not natural
1/4 cup milk, add extra as needed
3 cups powdered sugar
Cookie instructions 1. Preheat oven to 325 degrees 2. In a large bowl, cream together butter, brown sugar, and white sugar until smooth. 3. Beat in eggs, then stir in vanilla. 4. Sift together flour, baking soda, and salt. Gradually add to wet mixture. 5. Add oats and chocolate chips. 6. Drop by heaping spoonfuls onto greased baking sheet. 7. Bake for 10 to 12 minutes, allow cookies to cool on cooling rack. Peanut butter frosting instructions 1. While cookies are cooling, in a large bowl, use an electric mixer to combine 3/4 cup butter and 1-1/2 cups peanut butter. Beat until smooth and well combined. 2. Mix in 1/4 cup milk then add 3 cups powdered sugar gradually. Add more milk as needed and continue to beat until the frosting is a good spreading consistency. 3. By this time the cookies should be around room temperature. If not wait until at room temp, then place frosting between two cookies and eat the yummy sandwich!
