This delicious healthy dessert is full of nutrition, super tasty and really easy to make. The poached pears melt in your mouth and it’s perfect for when you have guests over. If you’d like to add some custard to your dessert I have a great healthy recipe on the website.

For the filling:

4 pears
1 tsp. vanilla extract
1 tbsp. cinnamon
250g honey or maple syrup
120g ground almonds
50g raspberries
3 eggs
125g coconut oil

For the crust:

100g rolled oats
100g ground almonds
50g coconut oil
1 tbsp. honey or maple syrup
1 tsp. vanilla extract
1 egg

Optional:

Fresh berries and chopped almonds to serve
Preheat the oven to 160C Start to make the filling by peeling the pears and chopping in half. Place 300ml of water in a saucepan along with the vanilla, cinnamon and 100g of the honey and bring to the boil....

15 oz jar Alfredo sauce
8 oz cream cheese
2 t minced garlic
2 T red wine vinegar
1 t grated lemon zest ( plus 1 T lemon juice )
1/4 t ground black pepper
2 c cooked shredded chicken
2 cans quartered artichoke hearts ( 14 ounces each )
2 c fresh baby spinach
1/2 c shredded mozzarella cheese
1/3 c Italian seasoned panko breadcrumbs
1 ounce grated Parmesan cheese
1 T salted butter
