The perfect topping for any Mexican dish is Pico de Gallo. Not just any pico will cut it though. And this is the perfect pico!

1 1/2 cups diced tomatoes
1/4 cup diced red onion
1 tablespoon seeded and diced jalapeno
2 tablespoons minced cilantro
juice from 2 limes
salt and pepper to taste
Mix together all your ingredients and place in an air tight container. Refrigerate for at least 2 hours before serving.
