1 cup shredded white cheddar
1 cup shredded pepper jack
1 cup shredded Monterey jack
1 cup mayo
1 jalapeno diced
1 T horseradish (optional)
½ cup pimento, drained, diced
For the patty melt
1½ lb ground beef
salt, pepper
8 slices bacon, cooked
8 slices rye bread
8 T butter
