Piña Colada Upside-Down Cake

Your favorite drink made into a cake! The coconut milk & rum extract add wonderful flavor to the moist yellow cake. Top it off with fresh pineapple, maraschino cherries & toasted coconut & you have a delicious tropical cake.

1/4 cup butter
1 cup packed brown sugar (light or dark)
1 medium pineapple
1/2 cup maraschino cherries, no stems
1 (15.25-18.25oz) box yellow cake mix
3 large eggs
1 (13.25oz) can coconut milk (I used light coconut milk)
1 tsp rum extract
1/2 cup sweetened flaked coconut
