1/3 cup pineapple preserves
1/4 cup finely chopped red bell pepper
2 Tbsp. finely chopped red onion
1 Tbsp. jalapeno pepper, seeded, finely chopped
1 tsp. dried mint flakes

2 Tbsp. fresh lime juice
1 (8 oz) can unsweetened pineapple tidbits, drained
1/4 cup finely chopped red bell pepper
2 Tbsp. finely chopped red onion
1 Tbsp. jalapeno pepper, seeded, finely chopped
1 tsp. dried mint flakes
1/8 tsp. salt
2 Tbsp. fresh lime juice
1 (8 oz) can unsweetened pineapple tidbits, drained
Combine ingredients in bowl; stir well & set aside. Spoon the salsa over chicken and/or fish. Serve with lime wedges and garnish with cilantro sprigs if desired.
