A light and healthy one skillet meal, center cut pork chops with a fresh apple and brandy sauce

4 (6 oz.) bone-in center cut pork chops
½ tsp. kosher salt
½ tsp. garlic powder
¼ tsp. fresh ground black pepper
1 tsp. olive oil
2 apples, peeled, cored and thinly sliced
1 cup thinly sliced fennel
1 cup thinly sliced onions
1 garlic clove, minced
¼ cup brandy
1 cup chicken broth
1 tsp., Dijon mustard
¼ tsp. fresh ground black pepper
1 tbsp. cider vinegar
2 tsp. fresh chopped thyme
