Potato Pancakes

A cross between a savory pancake and a hash brown, these potatoes are a fabulous way to use leftover mashed potatoes. The kids LOVE them.

2-3 T olive oil
2 1/2 c leftover mashed potatoes
1/4 tsp salt
pepper to taste
1 tsp water
~1/2 c flour (or enough to make a nice dough when all of this is mixed together)

This recipe takes a little art and a little science. You may have to play with it to make the dough just right.
Heat oil in skillet (about ½ in deep in skillet.) I use olive oil. While that heats….
Take leftover mashed potatoes and place in bowl. Add salt, pepper, water, and enough flour to make a nice dough when all of this is mixed together. When you knead with your fingers, you should be able to form a ball. Take ¼-1/3 cup of mixture and form into a patty. Place patties in heated oil. Let cook on one side ~2-3 minutes or until golden brown. Flip over. When both sides are golden brown, set on paper towel, pat and serve.
