Potato & Veggie Frittata

A quick weeknight meal that combines lots of healthy ingredients - potatoes, zucchini, tomatoes, onion, eggs, etc. And a little cheese and bacon for good measure.

1 Klondike red skin potato, diced & cooked
1/2 of a small zucchini, diced
1/2 of a roma tomato, diced
1 Tb onion, chopped
2 eggs
splash of milk
salt & pepper, to taste
red pepper flakes, to taste
olive oil
handful of shredded cheese - I used a colby/monterey jack blend
1 slice of crispy bacon, optional (I used pre-cooked microwave bacon since I was just making 1 slice)
1/2 of a small zucchini, diced
1/2 of a roma tomato, diced
1 Tb onion, chopped
2 eggs
splash of milk
salt & pepper, to taste
red pepper flakes, to taste
olive oil
handful of shredded cheese - I used a colby/monterey jack blend
1 slice of crispy bacon, optional (I used pre-cooked microwave bacon since I was just making 1 slice)
Heat a small skillet over medium heat. Once hot, add a turn of olive oil and your cooked potatoes, zucchini and onion. Cook until onions are translucent and the zucchini is tender.
