Pretzel Rolls

Sausage rolls are one of those foods I was introduced to when I married a Brit. They’re essentially a high-calorie, high-fat, high-taste party food – sausages wrapped with pastry, baked and then dipped in some kind of sauce. They’re yummy, but they certainly wouldn’t be described as healthy.

1 cup bread flour
1/4 cup wheat germ
1/4 cup wheat bran
1/2 envelope of quick rising yeast
1/2 tsp brown sugar
1/2 cup + 1 tbs hot water (55°C)
Filling for your rolls (I went with chicken sausage, spinach, and light gouda)
6 cups water and 1/4 cup baking soda for baking soda bath
cornmeal to line baking pan
Combine flour, wheat germ, wheat bran, yeast, and sugar in food processor. With processor running, add hot water. Process to knead for 1 minute. Place in oiled bowl to rise for 35 minutes to an hour. Cook and prepare filling. Roll out dough. Fill 3-4 pouches with fillings. Leave to rest for 20 minutes. Bring water to a boil, add baking soda (will bubble). Preheat oven to 170C. Line baking sheet with parchment. Oil and sprinkle with cornmeal. Drop pouches into boiling water. Leave one minute, then flip with slotted spoon. Allow to cook an additional minute. Remove from water and place on baking sheet. Bake for 25 minutes. Let cool for 10 and enjoy =)
