Pumpkin Cupcakes with Sweet Ginger Frosting

Deliciously spiced, mini pumpkin cupcakes topped with a puff of ginger frosting and drizzled with caramel.

½ cup unsalted butter, softened
¾ cup granulated sugar
1 cup pumpkin puree
2 large eggs
1 tsp vanilla extract
2 cup all-purpose flour
1 tsp baking soda
¼ tsp salt
1 tsp pumpkin pie spice
½ cup milk
For the frosting:
1 8oz package mascarpone cheese, softened
4 oz cup cream cheese, softened
1 cup confectioner's sugar
1 tsp vanilla paste
¾ ground ginger
For the caramel:
½ cup packed light brown sugar
3 Tbs unsalted butter
¼ cup evaporated milk
