No bake cookies are some of my favorite things ... tasty, easy and no need to heat up your kitchen! And when I saw these pumpkin spice no bake cookies over at Aunt Peg's Recipe Box (pinned to my sweet stuff Pinterest board) ... I knew I wanted to give them a try and share them with you! Just in time for Thanksgiving!! So, let's {taste this} and make these pumpkin spice no bake cookies!! These taste just like a cinnamon-y old school oatmeal cookie with the right amount of pumpkin spie gooness!

2 cups granulated sugar
3/4 cup butter
2/3 cup milk
1 small box pumpkin spice pudding mix
3 1/2 cups quick cook oats
1/2 teaspoon vanilla extract
