Pumpkin Waffles

I love pumpkin anything. Hot pumpkin anything in the morning is awesome. So, naturally, pumpkin waffles in the fall is an awesome treat.

3 cups flour
2 tbsp. baking powder
2 Tbsp pumpkin pie spice
1 tsp baking soda
1/2 tsp salt
4 large eggs
1/2 cup packed brown sugar
2 cups pumpkin puree
1 2/3 cups fat free milk
1/2 cup (1 stick) unsalted butter, melted
Warm syrup and whipped cream (optional), for serving
1. Preheat your waffle iron. 2. In a medium bowl, whisk together the flour, baking powder, pumpkin pie spice, baking soda and salt. 3. In a separate medium bowl, whisk together the eggs, brown sugar, pumpkin, milk and butter. Whisk in the dry ingredients until smooth. 4. Scoop batter into your waffle iron and close the lid. Cook 2-3 minutes or according to your waffle iron directions. Serve warm with syrup and Sweet & Creamy Whipped Cream (also on MRM)
