Quick buttermilk pancakes

Buttermilk pancakes ideally served with maple syrup, honey, or bacon. Or all!

Makes 12:

220g plain flour
1 egg
1.5 teaspoons baking powder
300ml buttermilk
25g to 50g sugar, to taste
1. Mix together the flour, baking powder and sugar. 2. Add the egg and stir. 3. Gradually pour in the buttermilk; enough to make a thick, smooth batter. 4. Add a small amount of butter and oil to a frying pan and start to heat. 5. Place spoonfuls of the batter on to the frying pan and cook for 2 to 3 minutes until the bubbles start to rise to the surface. 6. Flip the pancakes over and cook for a further 2 to 3 minutes. 7. Remove from the pan and serve.
