Quinoa & fresh veggies combine with an Asian inspired dressing to create this healthy delicious salad.

For the Salad.
2- Cups cooked Quinoa- cooled
1- Cup Shredded Red Cabbage
1/2- Red Bell Pepper Diced
1- Cup Shredded Carrot
1/4- Cup Green Onions chopped
1/2 – Cup Cashews

For the Dressing
1/4 – Cup Peanut Butter
1/2- tsp ground Ginger
3- Tbsp Soy Sauce
1- Tbsp Honey
1- Tbsp Red Wine Vinegar
1- tsp Olive Oil.
What’s great about this recipe is that while the quinoa is cooking you can be chopping your veggies. Once you’ve got the quinoa cooked and cooled and your veggies are all nice and chopped mix everything...
