This soup is perfect for any cold or rainy day. The ultimate comfort food.

1 cup onion
2 cups chopped russet potatoes
1 cup chopped celery
1 cup chopped carrots
2 cups 1/2 n 1/2
2 cups milk
3/4 cup butter
3/4 cup flour
1 tsp salt
1/2 tsp sugar
dash of pepper
Parsley for color

In a large pot cook vegetables in enough water to barely cover for about 20 minutes, or until tender. In a medium saucepan melt butter. Add flour and stir until satiny. Add milk and 1/2 n 1/2; cook until smooth and thick. Mix everything together in large pot. Season. Add salt and pepper to taste.
This is ideal to do early in the morning and let set in crock pot throughout the day to develop flavors.
