Ramen in Curry Sauce with String Beans and Ground Pork

Today I'm sharing an old favorite with you. I have had this recipe for ramen in my inbox for several years. In fact, I have no idea where I got it! The great thing about it is, you use packaged ramen noodles and add delicious flavors to them and it comes together in a flash! I try to to buy the ramen that has the seasoning packets (and discard them), not the noodles that are already flavored. 4 (2.25 oz.) packages ramen noodles
2 T. extra virgin olive oil
2 cloves garlic, minced
1 small yellow onion, finely diced
1 T. curry powder
12 oz. ground pork
1 (15 oz.) can light coconut milk
2 T. fish sauce
2 T. freshly squeezed lemon juice
1 T. brown sugar
1 lb. frozen green beans, thawed
12 large fresh mint leaves, chopped
