Ramen Noodle Cole Slaw

This delicious twist on tradition cole slaw is the perfect side dish for summer!

3 green onions, chopped
1 bag cole slaw mix
3 tbsp. sunflower seeds
2/3 cup slivered almonds
1 pkg. chicken Ramen noodles, broken into small pieces

Dressing:
1/4 cup olive oil
1/4 cup sugar
1 tsp. salt
3 tbsp. distilled vinegar
1/8 tsp. black pepper
Spices from noodles
Roast almonds and sunflower seeds on a cookie sheet in oven for approximately 5 minutes, or unti lightly browned. Combine dry slaw ingredients (except crumbled noodles) in a large bowl. Mix dressing separately and pour over slaw. Mix well. Add noodles just before serving. Slaw and dressing can be made ahead of time and chilled overnight.
