A dark chocolate cookie crust filled with whipped mascarpone and topped with raspberries. Perfect for Valentine’s Day!

For the Cookie Crust

½ Cup (3.5 Ounces) Sugar
¾ Cup (3 Ounces) White Flour
½ Teaspoon Baking Powder
¼ Cup Cocoa Powder
½ Teaspoon Salt
8 Tablespoons (4 Ounces) Unsalted Butter, Softened
½ Teaspoon Vanilla Extract

For the Filling

1 Cup Mascarpone Cheese, Softened
1 Cup Heavy Whipping Cream
¼ Cup Powdered Sugar
