Red Velvet Cheesecake Brownies- Made Two Ways

Red velvet brownies with a cream cheese swirl made either in a 9x9 pan or mini versions made in a mini muffin tin.

Brownies
8 tablespoons unsalted butter, melted
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon vanilla extract
1 tablespoons red food coloring
1/2 teaspoon white vinegar
2 eggs, lightly whisked
3/4 cup all purpose flour

Cheesecake Filling
8 ounces reduced fat cream cheese, room temperature
3 tablespoons granulated sugar
1/2 teaspoon vanilla extract
1 egg yolk
